Chocolate fix for breakfast! Not a lot to say today, other than it has been a very long summer, quite overwelming time-wize. Anyway, here ya go!

Double Chocolate Muffins


  • 1 3/4 C. all purpose flour
  • 3/4 C. sugar
  • ½ C. unsweetened cocoa powder
  • ¼ tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 C. milk
  • 1 tsp vanilla
  • ½ C. butter, melted
  • 1 C. semi-sweet chocolate chips


Preheat the oven to 350ºF. Line 12 cup muffin pan with paper liners.

In large bowl, combine flour, sugar, cocoa, baking soda, baking powder and salt, set aside. In a separate bowl, whisk eggs, milk, vanilla and butter until combined. Make a well in the center of the flour and pour in wet ingredients. Stir until just blended then fold in chocolate chips.

Spoon batter into liners and bake for 18 to 20 mnutes. Muffins should spring back slightly in the center.  Remove pan from oven, cool slightly in pan then remove to wire rack.
